Mint
- There are several varieties
of Mint, the most well-known being
Peppermint & Spearmint... both will be
known to Cooks and Home Gardeners I'm sure.
Growing
- Mint is such a tenacious plant... you will
have NO problems growing it! It likes partial shade or sun, a well-drained,
rich organic soil, but will literally grow and spread anywhere... and you will
suddenly discover just how quickly when it takes over!
Uses
- I use all Mints in
Cooking, mostly in the
popular 'Potato
Salads', as well as 'Mint Sauces' over Steamed Veggies... see our Vegetarian
Cooking Page It is delicious in Fruit Salads & Drinks also. In fact, Mint can be used
anywhere ~ just experiment with it. Don't underestimate it!
I also use Peppermint regularly in Herbal Teas to aid
Digestion, Colds & Flu. A combination of Peppermint, Yarrow, Elder Flowers
& Parsley works wonders.
Recipe
- Herbal Infusion
- Take 1 healthy head
of Mint, 3 leaves of Yarrow, 1 head of Elder Flowers & 1 small bunch of
Parsley. Place all Herbs in a small tea-pot, pour 1 Cup of boiling water
over, place lid on top, and leave to sit for 10-15 minutes. Strain, and
add some Honey to sweeten if desired - delicious! A drop of Cayenne powder
& fresh Ginger can be added to aid in Fevers or Colds.
Recipe
- Double Mint Foot Cream
- (A
cooling & refreshing cream which will gently soften & soothe the skin.
These ingredients are sufficient to make 100g.) 10g/2 tsp Cocoa
Butter, 10g/2 tsp Beeswax, 30ml/2 Tbsp Almond Oil, 15ml/1 Tbsp Wheat germ Oil,
30ml/2 Tbsp Spearmint infusion (see Calendula
page), 1/2 tspn Borax, 10 drops Peppermint
Essential Oil.
1) Heat the cocoa butter, beeswax and base oils (almond &
wheat germ) together in a bowl over a saucepan of slowly boiling water until the
ingredients have melted.
2) Warm the infusion and dissolve the borax in it.
3) Take the oily mixture off the heat, slowly add the infusion
and stir until cool.
4) Add the essential oils and store in a glass jar in the
refrigerator. It will keep for at least 2 months.
Tangy Mint Tonic
- 2 cups freshly washed Mint Leaves, 1/2 cup Lime or Lemon juice, 1/2 cup caster
sugar.
Blend the above ingredients together. Half fill a glass
with the mint mixture. Add Grapefruit juice to taste & top with tonic
water! Serves 4.
